Our pals and partners at Montreal’s Semilla Coffee have been bringing incredible Honduran coffee to us for years. Their continued collaboration with producers in the Comayagua Mountains is something that we are always proud to support, and like many of our peers, we long ago became especially smitten with the work of Jesus “Chungo” Galeas — the wizard himself.
Chungo has remained an annual fixture of our menu, from gobsmacking rare-variety naturals to everyday elegant field blends, but this year, we were psyched to learn that his wife and longtime farming partner — Judith Santos — was exporting an offering of her own. When tasted blind, we would’ve purchased this one no matter WHOSE name was on it, but the fact it let us continue supporting the same family while also recognizing the work of a woman farmer on her own sent us over the moon.
Like fresh honeydew dipped in a Nutella glaze, this stuff is opulent sipping, and a regal reminder of how good a straight-up washed Bourbon can be. Of course, Judith’s expertise is no surprise — she’s a second generation coffee farmer, and has been working in tandem with Jesus for years. Her dedicated parcel is 3 hectares, and she processes with an extended dry fermentation before pulping, followed by a wet fermentation and finished with a slow dry on raised beds.
