Among his community of coffee producers in Honduras, Jesus “Chungo” Galeas has been an all-star for years, and we are honored to have his proverbial jersey in our proverbial rafters as we welcome him back to our menu for the fourth straight season ⭐⭐⭐⭐

Jesus’s story starts like this: he cut his teeth working for the Honduran Coffee Institute (IHCAFE) for seven years, encouraging coffee growers to move toward specialty micro lot production while maintaining financially and environmentally sustainable practices. Gradually building his network over the years, he connected with our importing partner, Semilla, in 2019, and we’ve been buying a smattering of his stuff ever since.

La Falda is Jesus’s home farm in Selguapa, where he produces a number of tried and true varieties, including Bourbon, Catuai, and IH-90. With these, he’s able to produce both beautiful field blends and exquisite single-variety separations, like this one. While his other farm, La Valeria, sometimes gets more attention for its prolific Pacamara production as well as his processing experimentation, the washed lots from La Falda are truly some of the best representations of classical varieties you’ll find anywhere in Central America.

This Bourbon, in particular, is among the realest of real ones. In Chungo’s wizard hands, the innocuous “washed Bourbon” is elevated to dizzying heights, thanks to a mix of immaculate farming, carefully extended fermentation, and meticulous milling. What you get is a coffee that’s deep blue, candy-bar sweet, and bursting with energy. 

This is elegance electrified. It is a desert island pick: something we could drink every day, every way, and never tire of. Espresso, filter, iced, ground, and sprinkled around the house, whatever you’re into — this one will not let you down.
