We would say that the FOURTH TIME’S THE CHARM, but the truth is Lazara’s coffees have been charming us ALL ALONG, and this just so happens to be the fourth time we have a chance to share it with you.
Lazara farms two parcels in Chanjon, Huehuetenango, yielding a field blend containing Caturra, Catuai, and Pache Rojo varieties. She works with the ASDEFLOR co-op (as does Agapito Lopez, another longtime partner) for processing, where the coffee undergoes a slow and low (temperature) fermentation before being dried on raised beds and finished on patios. Season after season, we continue to be enamored with the coffees that come out of this cooperative, and we’re incredibly proud to have longstanding relationships with several of its producers.
This year’s rendition from Lazara really is PEAK COZY: smooth as butter, sweet as sugar water, comforting as a nursery rhyme. This is a coffee that doesn’t need to be OVERTHOUGHT but that we definitely do encourage you to OVERFEEL 🥰 on whichever brewing method puts you most in touch with your emotions. Probably Aeropress ;)
