Everybody’s got THAT FRIEND who is allllll about natural-process Ethiopian coffees. “It’ll change the way you think about coffee,” they say. “It’s a fruit bomb,” they say. Maybe this is you. Maybe, at some point, it’s been all of us. But sure as these coffees have their DEDICANTS, so too are their detractors — those who scoff at that fruit-forward funk that coffees like this can deliver. In the wild emotional rollercoaster that is a lifelong infatuation with coffee — we daresay you may even find yourself on both sides of this contentious aisle. 

Regardless of where you stand today, here’s what we implore: TAKE A SIP OF SIBU. Oh yeah. This is a coffee that’s just as much for the cynics as it is for the fan kids, the haters, or the evangelists. Lest I digress too far: this is a big, brooding, sticky sweet, soulful coffee. We argued for what felt like WEEKS (but was probably less than twelve hours) about how to describe its flavor profile — not because it’s wildly complex like some of our other show stoppers, but because it’s wildly deep and free. This is a coffee that digs way into your spirit and isn’t afraid to just sorta chill out there. Most importantly (maybe) — it is just so, so good.

Guji is one of Ethiopia’s beloved coffee-growing regions, making it one of the most fabled in the whole wide world. Sibu is a processing/exporting operation run by Kedir Hassen (the word itself refers to a traditional snack in Ethiopia — roasted coffee cherries, fried in butter) with several washing stations throughout southern Ethiopia. Buliye Washing Station is distinct in that it only produces dry/natural process coffees, receiving cherries from approximately 200 farmers in the towns of Buliye, Wamana, Borticha, and Dabaye. With hundreds of raised drying tables, a portion strategically shaded in order to meticulously control drying tempo, this station produces some truly exquisite coffees that evoke the big, heavy fruits that make this style famous, while avoiding the gnarly and more polarizing flavors of over-fermentation that are often mistaken for part of its charm.

This coffee also marks our first time working with Osito, an importing partner with a fantastic reputation among many of our pals and peers. As they work toward deepening relationships with unique supply chains in Ethiopia, we’re thrilled to be along for the ride, and proud to be starting with Sibu Buliye.
