ETHIOPIA. In a coffee context, perhaps no place needs less of an introduction. In an everything else context, we are frankly underqualified to touch even the tip of the iceberg, but what we CAN say is that Ethiopia is a complex, challenging, and endlessly rewarding country to connect with, no matter how distant our connection may be. 

In terms of sheer cup quality, Ethiopia presents an embarrassment of riches. This is the landscape that birthed Arabica coffee, and indigenous/heirloom varieties pepper hills, forests, and fields throughout huge swaths of the country’s present-day borders. The diversity of flavor found here is dizzying, but most share a transcendent luminosity, an end-of-tunnel brightness that coffee maniacs are drawn to like moths to flames. 

We’ll be featuring more than one coffee from Ethiopia this year, but we’re thrilled to kick off the season with this next-level washed offering from Sidama. Roughly 1,500 growers deliver their cherries to Hamasho Washing Station, with trees sitting as high as 2,360 meters above sea level — SKY HIGH is scarcely an overstatement in this context! Under the supervision of brothers Asefa and Mulugeta Dukamo, who own and operate the exporting operation Daye Bensa, Hamasho gives their coffees a wet fermentation of 36 to 72 hours before drying on raised beds for 9 - 12 days, until a moisture content of 10% is achieved. This combination of extreme elevation and meticulous monitoring yields profound clarity and hypnotic fragrance. We taste abundantly sweet peach, wild flowers, and citrus, and we’re filled with that feeling of light peeking through a lush canopy. This coffee is beautiful. Over and out.
