Here is another installment in our long-running collaboration with West Taghkanic Diner! We have been sourcing an exclusive coffee for our first wholesale account for nearly three years now. The task: find a coffee that is IDEAL in the diner setting, that is approachable but interesting, AND that follows our sourcing values.
Santa Matilde is a fifth-generation farm run by the Ariz-Herrera family in the Apaneca-Ilamatepec region of Ahuapachan in El Salvador. This farm is one of the first in the region to cultivate and export specialty coffee—they can clock back to the year 1875! Astounding!
This particular lot is an arabica variety separation of Bourbon which was processed at the wet mill on site at Santa Matilde. The Ariz-Herrera family has enjoyed multiple wins and mentions in the El Salvador Cup of Excellence competition, and participates in funding/supporting community projects for children.
We found this coffee to bear all the hallmarks of one of our favorite candy bars—SNICKERS! Milk chocolate, roasted peanuts, and caramel all wrapped in a HUGE-bodied coffee. Perfect for pie, savory breakfast, or even smoky meats!
