New to us AND our importing partners Shared Source, Alexander Cabrera’s 100% Castillo lot is an IMPECCABLE reminder of the beauty of supremely high elevations and slow fermentation washed coffees.
Sitting way up at 2,250 (!) meters above sea level, Alexander’s ancestors had once regarded this parcel—El Guayacán—as TOO HIGH for coffee, but nowadays, six years after Alexander inherited it, El Guayacán is replete with elite Castillo. Though this is a variety largely known for its rust/borer resistance and high yield potential, Alex’s diligent processing — which starts with floating for ripeness and proceeds to an exceptionally long low-o2 fermentation only viable due to his extreme elevation — gives us one of the best Castillo renditions we can remember.
Tasting like goopy peach preserves baked into a resplendently sweet fluffy pastry, this coffee has quickly become a house favorite. Juicy on filter and jammy on spro, it’s a TOO EASY recommendation no matter how you spin it ;)
