There’s something especially gratifying about sourcing coffees with particular destinations in mind. Doing so requires a wholesale partner who has very distinct needs, and is deep enough in cahoots with us that the requisite trust and reliability of the relationship are clear. For this coffee, there’s an extra sentimental element of matchmaking, with longtime producing partner Yuki Minami brandishing the bags of an OG Touchy collaborator — West Taghkanic Diner.
Yuki, the spark that started Aequitas Coffee, is one of our original heroes. In addition to being an inspiringly badass individual, Yuki has built Aequitas into the central exporting partner for all of the coffees we’ve carried from Brazil, so with every one that we represent, we tip our hats to Yuki. Not only has she profoundly impacted her community’s livelihood, but her neverending energy to improve, experiment, and support other producers is the flame that we ALL need to light in our lives!
Yuki’s coffees run the gamut from très classique to avant-garde, with this one situated toward the former end of the spectrum. Yellow Catuai is a prominent variety in Brazil, known for its strong yields in the field and mellow, balanced acidity in the cup. Under Yuki’s direction, the fruit undergoes a gradual and well-monitored natural/dry process, coming together with milk chocolate sweetness and dried fruit brightness. This classy-but-fun flavor profile perfectly suits West Taghkanic Diner, an institution that embraces the best and most wholesome elements of nostalgic indulgence while simultaneously pushing the envelope for quality and holistic sustainability with every dish they reinvent.
